Product Characteristics: Mâche is a European salad green returning in popularity in the United States. It is a small green that grows in rosette rosette-shaped bunches. It has dark green leaves on short stems. It has a distinct sweet taste taste—“the “mayonnaise of salad greens”. It is wonderful dressed simply with toasted walnut oil and a dash of good sherry vinegar.
Mache Salad Recipes
Mache Salad #1
Dress mache with a walnut oil dressing. Serve with wedges of ripe pear and creamy French goat cheese. The walnut oil accentuates the nutty taste of mache.
Mache Salad #2
Drizzle greens with walnut oil then add a few drops of sherry vinegar vinegar. Sprinkle salad with ½ cup of the season’s new-crop walnuts in large pieces and 1 Tbs snipped chives.
Walnut Oil Vinaigrette
Vegetarian Cooking For Everyone by Deborah Madison
1 ½ Tbs sherry vinegar or tarragon vinegar
ragon 2 shallots, finely diced
Salt & freshly milled pepper
1 tsp Dijon mustard
6 Tbs roasted walnut oil or a mixture of walnut and extra virgin olive oils.
Combine the vinegar, shallots, and ¼ tsp salt in a bowl and let stand for 15 minutes. Stir in the mustard, then add the oil. Whisk well until the dressing is thick and smooth. Season with pepper. Taste and adjust the amount of vinegar or oil if needed.
