Eden has worked with a group of Ecuadorian farmers since the early 1980s helping to convert their land, growing methods, and cleaning facility to the highest standard of organic production. EDEN Organic Quinoa is one of the few varieties that can truly be called the 'Mother Grain' of the Americas, organically grown in its native land, on small family plots at over 11,000 feet in the Andes Mountains. Eden's Purchasing Director says, "The soil here is the richest I've ever seen, close to 15 feet deep with a beautiful loamy texture. Worms are abundant and large." The ideal environment, seed, water, and tending methods produce rich nutrition, fluffy texture, and sweet nutty flavor.
Quinoa's natural saponin coating must be removed before it's ready for cooking. While the common method is to soak and wash excessively with water, EDEN Ouinoa is mechanically de-saponized. The saponin is removed by rubbing. This superior method best preserves flavor and nutrients.
Calling it the "Top Secret Superfood," Men's Health Magazine recommended EDEN Organic Quinoa in its April 2007 issue.
