EDEN Organic Spelt Flakes are roasted and rolled in Nebraska. Whole grain spelt is sprayed with filtered deep well water and and gas flame roasted in a ceramic kiln. After roasting the grain is rolled into flakes on stainless steel rollers. The flakes are packaged at Eden's AIB 'Superior' rated facility in one pound reclosable standing pouches. Each is nitrogen flushed for freshness.
Spelt Triticum spelta is an ancient and distant relative of modern wheat, first grown about 9,000 years ago in the Fertile Crest area of the Middle East and northern Greece. In Italy it is known as farro, farricello, Zea, and siligo. In Germany it is known as dinkle. Spelt was the staple bread grain of Europe and the Middle East until being displaced by modern hybrid wheat. Spelt is still a major food crop especially in Germany, Switzerland, and Belgium. The twelfth century healer St. Hildegard wrote, "Spelt is the best of grains. It is rich and nourishing and milder than other grains. It produces a strong body and healthy blood for those who eat it and it makes the spirit of man light and cheerful."
Spelt has not been tampered with by plant breeders and is non-hybridized. A perfect crop for organic agriculture, its strong hull offers natural protection from insects and pollutants, while retaining nutrients, moisture, and freshness during storage. Known as a 'gentle' grain with a protein structure that is easier to digest, spelt is enjoyed by many who have sensitivity to modern hybridized wheat. However EDEN Organic Spelt Flakes are not a wheat free or gluten free food.
Scientists at the USDA Human Nutrition Research Center at Tufts University say "Whole grains help regulate blood sugar by slowing down the conversion of complex carbohydrates into sugar. In fact, low-glycemic index foods such as whole grains reduce hunger and can help to control weight." Scientists at the Agriculture Research Service recently completed a study of more than 2,000 people concluding, "at least three or more servings of whole grain foods every day could reduce the chances of developing metabolic syndrome - a condition marked by a combination of abdominal obesity, high blood pressure, poor blood sugar control, low HDL 'good' cholesterol and high blood fats."
According to the FDA, "Diets rich in whole grain foods and other plant foods and low in total fat, saturated fat, and cholesterol may reduce the risk of heart disease and some cancers," "Low fat diets rich in fiber-containing grain products, fruits, and vegetables may reduce the risk of some types of cancer, a disease associated with many factors," and "Diets low in sodium may reduce the risk of hypertension or high blood pressure, a disease associated with many factors."
