Product Characteristics: Linguine is a Ligurian specialty. They are flat and narrow like a taglliatella between 0.057"-0.062" thick. Linguine is the best paired with fresh tomato - based sauces with vegetables and herbs, or with quick hot sauces made with extra virgin olive oil, garlic, red hot peppers and anchovies. Other perfect matches are fish-based sauces with the shell fish and seafood, and with the white sauces made from cream, mascarpone, soft cheeses, adding spices like saffron, radish, carry and ginger.

Product Characteristics: Fusilli belong to the very short straingt pasta cuts: they are specciality of the Campina region. They have a spiral shape: they are 1.614'' long, betweeen 0.053''-0.058'' thick, with a 0.393'' diameter. Long ago, Fusilli were made with a traditional method, passed on from mothe to daughter, by twisting with a swift and confident movement of the hands, a "saghetto" around a knitting needle. This movement resembled the one of the spinning machine. The word "fusillo", as a matter of fact, comes from " fuso", spindle or rod typical of knitting. They are expecially tasty with ragù ( for example napoletana) and riccotta sauces. They also tastee excellent with tomato sauces, adding peppers, eggplant, olives and capers.

Product Characteristics: Fettucine belong to the long, flat sectioned pasta cuts and are 0.279" wide and 0.021 thick. It is not easy to determine the origin of this cut, widely spread and known all over Italy, even if it mighr have different names. Most likely Fettucine come from Lazio in the central Italy, where they are the pride of the regional cuisine. Although Fettuccine are very versatile pasta format thereofore they can be tasted with a wide range of different sauces, they are particularly recommended in dry pasta dishes with tomato sauces, or meat ragù. They are also excellent with fish and shellfish sauces.
